Valrhona’s 2001 vintage Chuao. A good, top quality chocolate that doesn’t stand out from the crowd as much as examples from previous years.

A very subtly flavoured, well balanced chocolate – a gentle developer towards a milky, brown sugar finish that also seems clear and refreshing. Along the way it’s strong citrus that’s also thick and dark with hints of tar and egg yolk. Looks quite grainy with a citrus, almost minty aroma. Melt is quite sandy and thick, length pleasantly flawless if not stunning. Overall a good chocolate, but not the best Chuao around.
