This is a chocolate that holds a commanding presence right from the moment you set eyes on it. The gorgeous appearance is glossy and emits a red-black hue that intimates of an extreme impact on the taste buds. Inhaling the aroma, you’re suddenly taken aback by the strong coconut perfume completely filling the nose with its tropical essence. Spicy notes of cinnamon and clove accent the coconut, along with mild traces of soft red fruits and maybe some quiet grapes to finish it all off. It’s not what you would expect from a 99%; it’s very easy on the nose, intoxicating, yet intriguing at the same time.

Suddenly, you’re totally engulfed by a flood of chocolatiness, the ultimate ideal of what an unsweetened chocolate should embody: pure, strong, and refreshingly bitter. Remarkably palatable yet forceful and domineering, the powerful impact will send you spiraling into chocolaty bliss. The flavor from the outset is tropical and spicy, with unsweetened coconut first on the palate, and an initial lightness of red fruits. Cloves then dominate and persist strongly as the chocolate simply renders you breathless, either from pure ecstasy or from pure shock. Indeed, regardless of your preference, the shock factor is strongly present, leaving you in utter disarray. Texture is thick and super creamy, with a melt that seems to last forever, and when combined with the onslaught of chocolatiness Noir Infini’s presence remains with you until next week. Addictive? Maybe. But I’m reaching for more….

Right from the outset, Noir Infini demands attention and piques the curiosity. But not in the same way that pretty colors, fanciful packaging, and poetic embellishments attempt to achieve. No, Noir Infini’s minimalist and stark black wrapping speaks simply yet boldly of what it conceals. Quite simply, Cluizel allows the chocolate to do all the talking. After the chocolate finishes hammering you during the length, you savor in the dark ecstasy that lingers so intensely in the finish. It’s a flavor and experience that engrains itself into the memory just as Grieg’s “”In the Hall of the Mountain King”" rings in your ears long after listening.

This is the bar that made Cluizel’s reputation. A pioneering effort into the world of unsweetened chocolate, this was the earliest bar to attempt to deliver an essentially unweetened chocolate designed specifically for straight eating. Since then several other manufacturers have jumped on the bandwagon, but this remains the reference standard – with a driving intensity no other chocolate can match. The surest test of how much you like chocolate.

Cluizel delivers this chocolate in a smaller 30g format, unlike his other bars which come at 100g, and in this case it’s a wise choice (more on that somewhat later) It’s visually stunning, a very pure red-brown, suggesting high-quality beans indeed. And the surface has a gorgeous sheen to it as well, making it on the whole a bar that instantly appeals. The aroma will leave you spellbound. By any standards it’s probably the strongest chocolate aroma out there, with a wondrous, exotic nature, containing floral and mango notes, and hints of coconut, along with the really powerful, acid chocolate body. One thinks immediately of tropical locales.

The flavour will knock your socks off. Initially it’s a pleasant floral waft, until a hyperintense chocolatey punch throws you back in your seat with an authority that simply leaves you defenseless. Hints of clove make an appearance, along with some red fruit aspects that hover just on the threshold where it’s difficult to pin them down. It’s also powerfully bitter – as you expect in a bar of this percentage but in this case approaching the merciless. It’s a flavour you’ll either love on first taste or probably never really acquire a taste for. Texturally, meanwhile, this bar is one of the very best of Cluizel’s art, which if you are familiar with his chocolate will let you understand that it’s beyond belief, hyper-creamy and hyper-smooth. What an effect eliminating the sugar can have!

This bar has some magical effect that satisfies a chocolate craving more effectively and immediately than any other. For that reason the 30g size is ideal – any more risks overload and even the most addicted chocoholic will find that this is able to overcome their tolerance. And really, this is where its niche is – when you need chocolate and you need it NOW, this is the bar to reach for.
