I will post my review for the Amano's take on Chuao soon. I personaly love this bar, I think you are quite right in saying that this bar will indeed be greeted with "uneven reviews" Alex. I think perhaps this does have more to do peconceptions than anything else. The use of a much more delicate roast is for me only a good thing here but it clearly moves the profile away from the likes of Amedei and even futher from Pralus take. I am looking forward to trying Domori's "Chuao" for this very reason.

I wasn't suggested that I tried two different finished bars though - only that the very new sample I tried needed time to settle. My feature review was for the same bar. I've tried some Amano Chuao recently that may have been effected by storage, with a slight 'damp tea towel' note creeping in, but still with all the same glorious notes.

I couldn't agree about the roast, though that's a matter of personal taste perhaps. Personally I prefer flavours that are closer to the cacao flavour and not introducing too much of another element.

See my review. Honestly, the bar I got sounds like the first finished bar you tried - i.e. not great. Could it be that this is a chocolate that suffers from process variability? I definitely wasn't thrilled. It seems to need a stronger roast, and a shorter conche, perhaps (?). If my experience, and your alternate experiences, are any indication, it looks like a chocolate that may be greeted with uneven reviews. Or is this Amedei setting expectations too strongly? It's hard to eliminate preconceptions about what a Chuao "should" taste like, and Amedei is surely 100% responsible for setting that preconception. The bar I got from Amano wasn't bad, but did feel, like your first experience, anticlimactic.
