Thanks for that. I've got a few people sending me brochures now, so hopefully something will come of it. There is one which seems interesting, and that is Slattery's in Manchester. Has anybody got an opinion on that? I haven't heard of it before.

Gareth..why don't you try Barry Callebaut. A very friendly company. They will point you in the direction of a good 'basic' course. They did this for a well known chocolate retail company.
Apparently, one day they may also be making your fav...Dairy Milk.

I need help! I work for a well-known confectionary company, and I run a small hand-made production department. I've only been there 6 months, and the staff have previously been somewhat neglected with regards to their development. I am looking to enroll them in some form of chocolatier course with an aim to qualify the core of my team as chocolatiers. If anyone has any advice, or can point me in the right direction, it would be greatly appreciated!

Ecole Chocolat (www.ecolechocolat.com) has an online Professional Chocolatier course. Once that is completed, they also offer onsite "finishing" courses that allow your staff to polish their skills.

The price for the online course is very reasonable, and it takes about 3 months to complete.
