Hello!

I'm a food technology student and I'm currently looking for some info regarding the chocolate industrial process. I have a lot of info, about history, cocoa farming, and chocolate traditional processes, I've even found some really interesting books on Project Gutenberg. I'm lacking information about two aspects, and I suppose this forum would be the best place to ask it.

My priority right now regards the present industrial process. All I can currently find are comercial sites that sell heavy machinery, but just by looking at them I can't figure exactly what they do or even WHAT they do. Can anyone recomend any resources? I know there is a huge book on the subject, but I can't find it here in Portugal, and it's too expensive to buy for the sake of a single work.

The other subject I'm lacking is about chocolate packaging, I have general info on aluminum foil, but that's pretty much it. I guess it's because apart from temperature chocolate is a really easy to pack food.

Oh and I know there are beautifull industry lithographies of the Lindt factories, but they are nowhere to be found.

Thank you in advance, and any help anyone can give will result in my gratitude.

Thank You
Hugo Soares.
