Well I contacted JP Wybauw. He was amazing. He replied immediately. His 2007 schedule is booked up. He suggested I take a 3 day course at Callebaut. He also said that we can try towork something out for 2008!! So I obviously said I would love that and there is a group who would love it! If it really works out I will be indebted to you! You will be welcome to come, too!!
Sothanks again!

Well it is easier to get here from Europe, this is true. It is a very interesting idea. I am sure it won't be difficult to get a group together, everyone here is constantly looking for a course and we usually have to go to Europe, and then it is only for a few days!
I will contact him and we will see.
Not everyone is "thrilled" to come here - unfortunately!
Thanks for the great ideas, I really do appreciate the effort!
Regards,
Ilana

He is based in Europe, so I can't see it being too expensive. But, I really don't know!!
Deb
Eventually, I want to be able to bring in Master Chocolatiers for various events once I get my shop up and running.

What an idea! Do you think he would travel abroad as I am not from the U.S./Canada! Maybe I could ask him... It would probably work out too expensive.
Thanks!
He will be doing private consulting in 2007 according to his website. I would suggest that you try to pull a class together and bring him in to teach it. You could advertise to get a beginners class, and then have a second course for the pro's
Just a suggestion!

Thanks. I am looking for something advanced, and it seems that their advanced class for 2007 has been cancelled. Did you take their class? It is so hard to fins a really professional course... It seems thateverything is 2 or 3 days and for basic understanding. I really appreciate the response!
Thanks,

Hi. I was wondering what school you people can recommend for learning more about chocolate. I know how to temper, mould, etc but I want to learn more techniques, decorations, fillings and improve my techniques by seeing pros and getting tips.... Someone mentioned ZDS Solingen. I do not want a two or three day basic course. What do you suggest??
Thanks!
