	<description><![CDATA[<p>Just recieved my permission to post, and thought I'd make my introduction.  I'm posting from rainy Vancouver, where I have a new (6 mths old)pastry and artisan chocolate cafe.  Although we have staff for f.o.h., I'm basically a one man show, doing about 20 varieties of chocolates, molded and hand dipped,as well as pastries and custom cakes.</p>
<p>Although I was raised in the "center of the Universe" (S'toon, Sask.)I started my culinary adventure in Luzern, Switzerland where I signed on for the usual 3 year cook's apprenticeship program. During my first year, the Police came one day looking for our pastry chef, who had "done a bunk", and the Chef glanced at me, then nodded in the general direction of the pastry section. There I stayed, and I was hooked.  For the last 20 years, even though I was employed as a cook, I invariably spent the majority of my time in the pastry dept.</p>
