	<description><![CDATA[<p>The ACMC is very simple to use.  Basically you set the high temperature first, once it reaches that, you set the low temperature, and when it reaches that, you set the holding/working temp.  To set the temperatures, you press the Temp Set button and the up or down arrow simultaneously.</p>
<p>So, for dark chocolate it would be something like this:  high: 120F (50C)  low: 81F (27C)  hold/work: 91 (32C)</p>
<p>This of course varies from chocolate to chocolate, most commercial couvertures come with the temp ranges printed somewhere on the package.</p>

	<description><![CDATA[<p>I have just bought a second hand acmc machine but just realised there are no instructions for it. Does anyone have instructions that wouldnt mind sending me a copy (I would pay all costs of course).</p>
<p>Also can anyone give me a quick set up guide so I can have a go with it. I am used to a chocovision machine that basically does most of it for you (I know very lazy)</p>
<p>any info would be most welcome</p>
