Hi Dan,
I have the AMC Temperer and it has a pretty small capacity. It is fine for dipping truffles or ganache squares though you have to get used to the movement of the chocolate in the bowl.It holds about 3-4 lbs of chocolate and takes a bit of time to go thru the cycle to temper. It is not suitable at all for filling molds due to the shape and the paddle in the middle.

hi Dan! If you go to the Equipment&Supplies forum you'll find a few threads on temperers. It also depends on how much you need. I got the chocovision x3210 from chocosphere and am very happy.

Can anyone offer their opinions of this temperer? Is it feasible to accomplish any amount of commercial work with this size machine?
