Thanks for all the advice folks! Hohare, the cutting board idea would be nice, but my production figures necessitate granite on a much larger scale. Will keep the idea in mind for home use tho!

Have you tried using a granite slab the size of a cutting board? I get mine from Tesco/Sainsbury's!! plus they are the ideal size to put in a freezer to make cigarellos, etc. It goes without saying they are inexpensive compared to a granite supplier.

Just noticed this post, you have prob already spent teh budget and getting granite is good idea. Another option is to buy a pizza chiller unit, you can get them with a granite top and double fridge underneath which is great for doing displays etc as can chill and pull out finished versions..as if by magic from under the table!

Can get them as cheap as 600 on ebay, or 750 nisbetts type catering co. Good luck!

Find your local granite supply company...you don't need to buy a ready made marble-topped table, you can put a piece of stone onto stainless steel tables, counter fridges etc. I managed to get a free piece of black granite as it was an offcut ( these can sometimes be quite big!)If you're not fussy on the colour, you might be lucky and get it free, or maybe just have to pay the polishing and delivery. One word of caution...some granites have lots of natural faults and areas with an open texture. You need something nice and dense with an even surface to prevent cross contamination etc.

Help! I am hopefully getting some extra money in my budget and I'm looking to source some marble topped tables to hand temper chocolate on which will give a more authentic experience for our customers, but I am having trouble sourcing them. Any pointers would be greatly appreciated!
