Hi I've just brought a bain marie & it's great for tempering & holding temper while you work, no more microwave tempering for me! It also means I can get so much more done. It cost about £150 incl VAT from http://www.keylink.org

I think Thalia H at Guittard once set out to build her own for as economically as possible - i forget the number, but it was less than $100 and worked well. Probably wasnt an aesthetic work of art worthy of showcase display, but certainly functional. Might be worthwhile seeking her out and asking her if she'd share her blueprints!

With the hot pad, you just have to experiment a little. I have one which has several different heat settings so I usually keep it low and use it to simply extend the time between reheating the chocolate (ie., with the hot pad I only have to reheat the chocolate every 20 minutes instead of every 10 minutes). It wont keep an even temp like a melting tank will but with some trial and error it might aid your process.

Thanks for the economical tips! About the electric blanket, I was worried that concentrating the heat from the bottom might mess up the chocolate since the chocolate on the bottom will get warmer and the surface chocolate cooler. But I guess if you keep stirring it your ok. I'll definetely be trying these! Thanks again!

Melting tanks aren't cheap. Other options are to insulate your bowl of chocolate as you work with it (eg., put it in another, bigger, bowl with a towel around it) or put it on top of an electric pad (one of the small electric blanket type things people often use for sore backs). Or use a heat gun (paint-stripper) to keep reheating the chocolate as it cools. Or just keep zapping it in the microwave every 10 mins or so to rewarm it.

At the end of the day, none of these will be as good as a temperature controlled melting tank, but they're cheaper and thats essentially the trade-off.

Hi everyone,

I am interested in getting a machine to maintain temperature, so it could maintain the temper of my chocolate as i work. Is that a melter? They seem to cost quite a bit, is there anything cheaper that could just keep the temper without melting the chocolate or anything like that?

Thanks!
