<p>Its best to warm slightly first with a heat gun/hair dryer to stop the chocolate shocking when it hits the cold surface but make sure you don't heat it to much.</p>

<p>I use sometimes old metal moulds. There is no problem. If you make filled products you have to work a bit faster because the metal moulds cooles faster.</p>

<p>Has anyone used stainless steel moulds? Someone wants me to make big pyramids (5cm x 5 cm base) solid chocolate. I've located some moulds,  but I don't know it it will work. Any advice?</p>
