	<description><![CDATA[<p>Hi all, recently I've gotten very interested in learning about the details of how chocolate is produced (particularly by the leading fine-chocolate makers). Can anyone recommend some good sources that I can read about all the minutia? (I looked for some books but couldn't really find anything...)<br />
I know a lot of users here are quite knowledgeable in the methods of the particular companies. How did you get to know so much? Would asking a representative from the company be helpful?<br />
