	<description><![CDATA[<p>yeah, i had always thought that invertase and invert sugar were completely different products and i managed to get some from a science teacher at the school where my sister works. its only for experimenting with.</p>
<p>i start a choclate skills course in a couple of weeks so i'm hoping to get plenty of information on local suppliers.</p>

	<description><![CDATA[<p>My understanding was that invertase was an enzyme, and not the same as invert sugar syrup.</p>
<p>You can get invertin from Keylink in Sheffield which I believe does the same thing as invertase.</p>

HB ingredients stock invertase, is listed as invert sugar syrup.<br />
I believe it is also known as trimoline.<br />
 There is an interesting chapter in Jean-Pierre Wybauw's book, Fine Chocolates. Pg180 deals with Fruit in liqueur chocolates.<br />
He states invertase may be added to speed up the process but is not necessary. </p>

<p>i am having trouble finding a supplier for invertase in the uk. does anyone know if it goes by another name or if there is anything i can use as a substitute.</p>
<p>can anyone give me the name of a supplier who sells invertase in the uk/ireland.</p>
<p>or if anyone knows of another way to make fondant turn to liquid i would be very grateful for any information.</p>
