	<description><![CDATA[<p>Hi! In his book - page74 He explainshow to make starch moulds. On our local forum, apastry chef commented that this is an old and very difficult technique. He claims that much experience and exactness is required.  Is this so?? What do you think/suggest? Are there other ways of making an alcohol liquid center?<br />
