	<description><![CDATA[<p>Dan, you must temper your cocoa butter first.  Even a small amount can be done with a microwave and then seeding it with a small solid piece. I just like to play around and I use 20 grams or even less at a time!  I soak it into a cotton ball and then polish each mould with the cotton ball.  Now a second way is to buy a cheap Badger Airbrush kit from Micheals ($25Approx) and then melt your cocoa butter and put it straight into the jar. The airbrush should temper the butter as it is being sprayed.<br />
Also, go to the BArry Callebaut website and they have techniques videos that will explain and show you how to work with the butter, chocolate etc..</p>

	<description><![CDATA[<p>The moulds have to be extra clean, then polished with cotton wool pads. If you are going to use cocoa butter try colouring it first this gives you shine and colour, a beautiful result. The cocoa butter will have to brought to 30 degrees for hand painting or you could use an air compressor to spray the mould first.</p>

	<description><![CDATA[<p>I'm trying to figure out how to make extra shiny chocolates. Would painting the molds first with cocoa butter do it? If so, does cocoa butter have to be tempered, and how do you temper a tiny amount? What about mixing extra cocoa butter into the chocolate? Would this improve the chocolate also? Any help greatly appreciated.<br />
