	<description><![CDATA[<p>I am looking for a ganache recipe suitable for filing truffle shells and/or filling chocolates. Our hotel has a deal with Valrhona so please dont start with the &#039;why don&#039;t you use this chocolate&#039;....It&#039;s Valrhona or bust for me. I tried one recipe with strawberry puree and creme de fraises and dried starwberries folded in at the end. the response was &#039;great taste but too heavy&#039;. I believe the powers that be wish for a lighter ganache, possibly even water based. If there are any other like-minded professionals who could help me it would be a great help.</p>
<p>My new executive chef wants to incorporate as many of the different plantation chocolates in our new chocolate range.</p>

<p>I have a three frame guitar cutter which I bought when I was living out in the US a couple of years ago and have never used. It comes with all the bits and three curing frames as well as spares, cutting boards etc.</p>
<p>I am not sure whether to put this on eBay as it is such a specialist bit of kit and secondly what would something like this be work - I think I paid around $1100 in the US.</p>

<p>Any thoughts/ help would due appreciated.</p>

	<description><![CDATA[<p>I have a chocolate problem. We are producing 5-kg blocks of compound chocolates (composed of almost 43% hydrogenated fat and the rest is cocoa powder) cooled in a cooling cabinet or what we call Paternoster. The problem with this chocolate is that after it is out of the cooling cabinet, there are deep waves on the surface of the hardened chocolate. What could be the cause of this and how can we avoid this? </p>

	<description><![CDATA[<p>Hi - I have some experience of panning machines having purchased the Decobassina type and the COMFIT from SELMI (who we represent in the UK). My view is that while the Decobassina type has a gas jet, it is difficult to adjust - and the machine is supplied with very sparse instructions and no training. It also does not have a sprayer to apply the chocolate to the item being coated. You need to spend a long time using trial and error to understand how the machine must be used. </p>
<p> </p>
<p>The COMFIT does not have a heater - but is supplied with a sprayer (that must be connected to a compressor) - SELMI also includes a one day training course to teach you how the machine should be used - and how to create a shiny end product without the use of gum arabic.</p>
