I would like to know the current prices (for chocolatiers and end producers) of Fine and Flavour Cacao grain and products like liquor, butter and powder. I know LIFFE and NYBOT are not good indicators for the Gourmet market…any ideas where to look?

That’s a really big question, not easily answered. Take what you find on the NYBOT and add $500-3000/ton depending on any number of factors – usually it boils down to availability at the end of the day, though. And that’s just to acquire the raw materials – you’ll either need to further process them yourself or pay someone to do it for you, all of which adds cost..
