My partner and I have established a small organic/fair trade chocolate factory from scratch here in NSW, Australia.
We're still in the very early days of production ourselves, but we've already consulted on a number of other similar setups both here in Australia, and overseas.
It's taken us more than 2 years to get to this point, and along the way we've amassed a lot of information about manufacturing techniques, equipment types and sources, and cocoa trading.
