HI, sorry haven’t been contributing regularly. am a self taught chocolatier from India. U guys in Europe/US have so much more exposure to great chocolate. I did the basic course from Callebaut, last year in Singapore. Am travelling to Paris, Belgium, Stuttgard, London from June 15th 06 to aug 1st 06. would really appreciate it if some of u could open your doors to me, and allow me to just be/ watch/touch/smell/absorb… in your chocolate kitchens, for a day or two or three…. would really like to get better finishes and garnishes, what we see in books looks so easy, but I want to see it happen. not looking at pinching your treasured recipes, we don’t easily get all the ingredients here in any case…
would really appreciate it.
