Pralus have gained a substantial reputation for making good quality fine chocolate from traded beans, originating from cacao growing countries around the world. They have one of the widest ranges of origin chocolate available, but also make a number of blended bars.
Caracas is one of these blends, and is actually made from beans from Trinidad, Ecuador and Ghana. It's quite a bizarre and misleading choice then to name the bar after the Venezuelan capital and what was once a famous bean variety. We're still trying to get the bottom of this with Pralus, but the misconception seems to have travelled a long way, and you might notice this bar being put forward as a 'Venezuelan' chocolate on some other websites.
That aside, this is an interesting and well balanced chocolate, though perhaps on the acid side for some. There are dark roast notes to balance the fruitiness (apple?) and a good, continuous length. If you like fruity chocolate, then this will be a good eating bar.

Fruity? How interesting! I'm quickly becoming suspicious that I am the victim of bar-swapping because my bar of Caracas was not fruity at all, but rather redolent of earthier and spicier flavors that to me resembled beans and fertile soil. I've read other reports of a fruity Caracas too.
