Hello to Everyone,
Just wanted to see if anyone here was headed to the Fancy Food Show in San Francisco in January? We have a big chocolate meeting their on the last day, I believe it is. Gary Guittard, Frederick Schilling(dagoba), and Michael Recchiuti will be there as panelists. Pam Williams of Ecole Chocolat is heading it up and it is going to be a discussion on defining fine chocolate. Hope to see some of you there!

I think the panel’s intent is to explore what (if anything) ‘fine chocolate’ means. See:

Seems just as possible that Recchuiti will be the odd one out, being the only confectioner amongst chocolate makers…

I think that it is going to be a great time and confectioners will have good input as well…because they use these ingredients most…either way I think it’s gonna be a great conference…Are you going Seneca?

Nope. I went to the last one in NY this past summer. I can’t afford it now, nor do I have the time.

I’ll certainly make my usual mad dash through the hall, but don’t think I’ll have time for anything more :-)
