I have been thinking for a while about writing a book,
which would be a sort of diary of a chocolatier,
the reality of production, the ups and downs
Laced with some intersting things about chocolate and a small
number of recipes. Full of real anecdotes.
Would welcome any feedback on the idea…
has anyone seem anything like that before…
I find most chocolate books a bit BORING betweem the ones on history
and the ones on recipes

Yeah, it sounds like a neat idea. Mort Rosenblum recently published a book called Chocolate: A Bittersweet Saga of Dark and Light. It’s basically a narrative through the world of chocolate, from Mexico, to Hershey, to Valrhona. It’s an interesting read, but by no means is it told through the eyes of a chocolatier or anyone else from the industry. Would your book be a narrative as well? Collections of stories, experiences, and what not? Might sound like a worthwhile endeavor, especially since I’ve never encountered a book like this. However, other narrative-type books have been published, by chefs such as Tony Bourdain, et al., but they merely tell the tale of a quest for a certain food. Different approach.

well, either the bourdain’s sort of book or more separate chapters
like “the man who ate everyhting”, which i recommend from a US havard lawyer beho became a food critic.

Your book sounds like a great idea! There is definately a need to bridge chocolate history and recipies. It would be great to include more intense info on tasting and analysing chocolate. I personally love the ‘science’ side of it all. So with the tasting and all that, you could back it up with tech info to give an understading of how and why crystalisation occurs etc. Lots of recipies for chocolates, always a big bonus. I also find that there are not many books around (NZ anyway) on incorporating other products such as almond pastes and pralines. Stories are always good.

i support you to do the book. i notice the writer could not forget the history too. it’s not fun to the yung people.

I don’t know about “bridging chocolate with recipes” because there is a plethora of this on the bookshelves already. I think a book would be nice that focuses entirely on the trials and tribulations, experiences, perspectives, etc. of an actual chocolatier. A veritable diary perhaps, i.e. a perspective from the inside just as chocolatero had suggested. It would make for an interesting read, imo. I would also suggest an ethnography, but that’s been done as well by Susan Terrio in her book “Crafting the Culture of French Chocolate.” Although it may be too anthropological for some, it’s still an interesting read.

I’m sure u’ve got lots of quite funny stories to tell, w/o names. And lots of frustrations. Anyways, imo England quickly becoming the place for chocolate lovers, despite some other people oppinions. Good luck!
