Can anyone offer their opinions of this temperer? Is it feasible to accomplish any amount of commercial work with this size machine?

hi Dan! If you go to the Equipment&Supplies forum you’ll find a few threads on temperers. It also depends on how much you need. I got the chocovision x3210 from chocosphere and am very happy.

Hi Dan,
I have the AMC Temperer and it has a pretty small capacity. It is fine for dipping truffles or ganache squares though you have to get used to the movement of the chocolate in the bowl.It holds about 3-4 lbs of chocolate and takes a bit of time to go thru the cycle to temper. It is not suitable at all for filling molds due to the shape and the paddle in the middle.
