I am contemplating purchasing a Hilliards Tempering machine.
Not sure if I should choose the "Little Dipper" (says it can be usd as a tempering unit for small batches) or a standard smaller unit up to 80lbs temperer since I am ut starting out?
Anyone here use these??
I have a Hilliards Little Dipper that I use for dipping truffles which I am extremely happy with. It runs about 1,200 dollars and is built like a tank. It is definitely a more commercial product than an ACMC Tabletop temperer. (These are nice machines also but the Hilliards has a much better build quality). My Hilliards gets a lot of heavy use at least 3 days a week, 8+ hours a day. I have had it about a year and so far I have no complaints.
