Does anyone have some useful tips regarding purchasing an automatic tempering machine? Do most people quickly outgrow a table top? Who makes the most reliable?
Being a control freak I have always made by hand in 12kg bain maries, but feel easter eggs and the like could be given over to something more automated. I am choosing between prefemac, dedys and mold'art so far.
I would recomend you look at Selmi machines
i am in the same situation. It the mo i use a mold'art 15kg machine. i am also torn between getting 2 larger 50kg mold'art machines or 2 prefermac or the fully auto Selmi plus.
My husbands work bourght a prefermac and he wasn't impressed with the plastic wheel or build quality.
i am torn between getting just one machine which i have to clean regulary or 2 wheel machines (1 for milk & 1for dark)
you could always get a tempering tank,they dont take up that much space and you will have tempered chocolate on tap.
