Can someone kindly refer me to what they think is the best thermometer for working with chocolate?

You’ve got a couple of options, and in my opinion it’s probably a decent idea to get one of each.

The first is the traditional stem themometer–there are digital and analog versions, but both are affordable. You’ll need this for checking interior temperatures.

The second is a laser or infrared thermometer. These are great, but will only give you a surface temperature. I find them really handy in table tempering, for instance, to check the temp. of the marble or chocolate surface.
