Best thermometers for chocolate?

Can someone kindly refer me to what they think is the best thermometer for working with chocolate?

You've got a couple of options, and in my opinion it's probably a decent idea to get one of each.

The first is the traditional stem themometer--there are digital and analog versions, but both are affordable. You'll need this for checking interior temperatures.

The second is a laser or infrared thermometer. These are great, but will only give you a surface temperature. I find them really handy in table tempering, for instance, to check the temp. of the marble or chocolate surface.
