Does anyone know where I can find metal rods for chocolate making? I came across these on a chocolate course a while back but have still not managed to locate a source for them.

They are essentially pairs of rods having rectangular cross-section for containing confectionery (chocolate or filling) and acting as a levelling guide prior to cutting and dipping/enrobing. It is generally useful to have a couple of sizes (depths) to achieve different thicknesses.

Short of going to B&Q and buying a metal rod to cut into lengths (which is not ideal because the range of depths is not great), I have no idea where to look!

Any help would be appreciated.

I’m one of the people who posted on the eGullet thread about this. I went to a local metal supplier and got a 12 foot length of 6061 aluminum (3/8 inch x 3/4 inch) cut into 12 pieces. It cost me $38 for the material and labor.

Caramel rulers are usually made of stainless steel. The aluminum is cheaper but lighter – fine for ganache (especially since I put the rods on a Silpat) but probably not heavy enough for caramel. I’ll eventually get some in different heights – my supplier has a wide range of sizes available.

Thanks for the info.

Knowing that they are called “caramel rulers” certainly made it easier to find them. I ordered a complete set from Vantage House – they are stainless steel and range from around £5 per ruler to about £8 per ruler – which isn’t bad.
