Hi, I new to the forum. I am a chocolate lover and amateur chocolate artist (molding & airbrushing are my passions). My current dilemma is which tempering machine to upgrade to. I think I’ve read all the postings related to tempering machines and I agree that knowing how to temper by hand is important but I’m not going to do that other than in an emergency. I have had 2 chocovision rev 2 units within the last 10 months. The first machine froze up, the moving mechanism just stopped. They sent me a replacement machine and the temperature gauge just broke last week. I wanted to upgrade to a bigger machine this year but I am hesitant to purchase either of their larger models because I assume it is basically the same technology (lights and fans) so if the smaller model breaks why wouldn’t the larger models break. I have no experience with any other tempering machines. I would appreciate any feedback and/or recommendations on good/bad experiences with tempering machines. My main concern is reliability and not cost but I can not find user reviews on the machines. Thanks

I’d go with a little dipper from hilliard if you’re looking for reliability and not cost. The chocovision’s are consumer level machines, meant for light use. The hilliards (or something similiar), are more industrial strength, yet small enough to be used for the avid home user. Expect to pay more, however..

Hi, We have just started distributing the Revolation X3210 in the UK and must say that it appears to be a great machine – I just spoke to a customer who has one and has tempered 3.4 ton of chocolate in 16 months – I have had the smaller machine for three years and it still works well although I have had to replace the baffle once because the thermostat went. I am happy to get the guy with the Rev 3210 to tell you himself about the machine.
