I’m just on the brink of having my own hand made chocolate business
(very small one!!) and even though i can temper the chocolate, its taking a lot of time. With two young children the obvious answer is a tempering maching.
But i can’t afford a new one so does anyone know where i can hire one in england ?
Any advise would be much appreicated.

Never seen tempering for hire, but here might be some options for you depending on h ow much you want to spend.
http://www.unionmachinery.com/…..p?pid=7372 these are stainless, water jacketed agitated vessels – this is the smallest they make. unionmachinery specializes in used equipment, dunno if they operate in europe or not. brand new they’re about $3600, used these are probably a couple thousand dollars. you temper in them by adjusting the flow of hot and cold water into the jacket.
http://18.104.22.168/pages/cfE…..elters.cfm this might be better suited for you, if you’re a very small shoppe. don’t go quoting me on this, but i think these can be had for about 600 US dollars or so
you also might want to put out some feelers on boards such as http://www.retailconfectioners…..index.html to see if there are folks who might want to give up some used equipment..

i also had wanted a tempering machine so i emailed hilliard. here is a copy of their reply:
The tempering melters are available in 3 sizes that are rated in how many kg per (8 hour) day they can temper. The 36 kg per day model holds 8 kg at one time and costs $5,500.00 US Dollars. The 110 kg per day machine holds 16 kg at one time and sells for $6,500.00 US Dollars. The largest unit that we make can melt 270 kg per day and hold 40 kg at one time. It sells for $9,100.00 US Dollars. We do not have representatives in the UK. You would purchase directly from us. The machines are designed to be easily serviced by you or a local electrician. We stock repair parts and have step by step instructions to repair any problem. The machine comes with spare parts and a one year parts warranty.
I can get a freight quotation when you choose which model you are considering. We do not collect and duties or taxes. Let us know if you have any further questions.
I was totally gutted that it is soo expensive! If anyone knows where i could get one for up to £600, please tell me. I am not keen on getting equipment like Revolution cos I hear it breaks often and it would be silly and expensive to send it for repair from U.K.
Extra info I found: The JKV Junior is £1,795.00 excluding VAT

I have the K5 from Chocovision and it works fine. But for the money and if you intend on a small shop. I like the chocolate warmers by Mol d’art. You can temper the batch by tabling or seeding and it holds the temper pretty well for an extended period. The largest warmer (22 lbs) will cost around $800.
They are available at pastrychef.com
