I have a small nougat business and have had a demand for our nougat to be coated in chocolate, as a result I am now looking to source a small 3 litres capacity tempering machine. Is there any do it yourself equipment out there? Please give me some advice.

TEmpering Machines: I had a nightmare experience purchising a rev from Chocovision. I bought a refurbished machine which they said are in excellent shape. When I received the machine it did not work. I shipped it back and they repaired it and again when I got it, it did not work. They were very difficult to deal with but they did refund my money. Overall it was an expensive experience because i had to pay duty,shipping, etc.. The machine was poorly packaged and was probably damaged via transit. That should give you red flags that the machine rev3210 is easy to break if banged etc.. I asked JKV what they thought of the rev3210 and their response was that they are just toys!! Anyhow, I would say don’t buy the REV3210 from Chocovision.

I would agree that3 kgone will be a toy and more likely to give you headaches than be helful. Better buy a heated holding kettle from chocolate world and temper by hand or work with a local chocolate maker to get them to enrobe for you. This is likely to be more cost effective.

I think that you are all being a bit unfair about the X3210 – Firstly, the Chocovision is not a toy – 4.5kg capacity may be small for some people, but is perfectly adequate for most – especially when you consider the price in comparison to the JKV. You could buy two or three X3210′s for the same money!
Secondly, unlike the X3210, the JKV is much more difficult to clean – so really needs to be left running all the time – if you cut the power and the chocolate hardens – you are in trouble.
Thirdly, the X3210 is used extensively by chocolatiers across the US & Canada – something that wouldn’t happen if the machine didn’t perform – if you want some testimonials – I am happy to supply them.
Finally, as the new UK distributor of the X3210, I am extremely impressed with the quality of support that Chocovision offers – and am happy to discuss any concerns anyone has.

Chocshop, my personal experience was a nightmare when dealing with Chocovision. They, as a company were difficult and rude. The machine broke in transit, not once but twice which really is quite indicative that these machines are not built very well. The JKV is built extremely well and I’ve have come to realize that you get what you pay for!! I can understand that your position is defensive considering the fact that you are peddling these machines.

I would also still argue that from a cost and efficiency point of view, a local chocolate maker who enrobes for you may be best
1) takes very little time to enrobe when you have big enough equipment
2) tempering always perfect, no reject
3) can do sides and bottom enrobing leaving top as is fast, which is the most attractive for nougat

I am interested in getting one. but please answer me these:
I have been told many times that tempering machines in general are ‘temperamental’ and break down easily – in which case, do we then send the machine back to you, and then you send the machine back to America to be repaired?
How long would it be to get the properly working machine back?
And do you do yearly product guarantees, so that the repair is free?
