Hi all,

Can someone tell me the best thermometer to use for tempering chocolate?
One chef suggested nothing more than a body thermometer but another said infrared. I would be very gratful for your help as I’m fairly new to tempering.

I think any digital stem thermometer with a precision of +/- 0.5 degrees would suffice for you

The best are the purpose-made chocolate tempering thermometers. A tempering thermometer is a very long, thin glass bulb variety – useful because it has a very wide reading over the range of interest. A body thermometer might be OK but generally these are short and so compress the reading range so you don’t get good visual precision. They also don’t usually have the very fast response of a tempering thermometer

Anyway, a good picture of one is at http://www.kitchenkrafts.com/product.asp?pn=CE0805&cn=110000 You definitely want the one with the yellow plastic tube for storage because otherwise it’d be far too easy to break. I didn’t find a UK web site for this on a lightening search but then again I didn’t look especially hard.
