I would like to inject some dried fruit w/ganache, and I'm wondering what tool works best for this. I've seen some syringes w/needles on them on a few sites, but it looks like the needles are too narrow for ganache. I've also noticed that these syringes are sold mostly via medical supply companies in large case quantities. It would be good to have feedback from someone who has used a syringe before I purchase a large quantity. I would appreciate any feedback anyone has on this method, or any other suggestions for injecting dried fruit w/ganache. Thanks!
Syringes are notoriously finickey to fill, and can't handle thick ganaches, your best bet is a brand new squeeze bottle with a long narrow tip, and cut the tip off to leave a very small hole. A piping bag with a Bismark (jam filled type donuts) needle tip works well too. If you're really stuck on syringes, you might have beter luck with vetrinarians--some of those hors/cow needles can be pretty big...
