I bought Amedei’s 70% a few weeks ago, but I wasn’t too pleased. Porcelana is amazing though.
However, yesterday I bought a new bar and thought I should give it another try. I was told in the shop that they had a recipe for hot chocolate with the 70% bar. The hot chocolate was sooo delicious! Chocolate and milk only …
But the big surprise came later in the evening. I had seen on Queer Eyes for Straight Guys that chocolate mousse could be made easily by whisking egg whites and cream together (I use to whisk them separately) and then add the melted chocolate. I wanted to give it a try. Yummi! Made by egg white, cream and chocolate only, it was the best chocolate mousse I have ever had. And the funniest thing is that the mousse got stiff quicker than I am used to.
In other words, a 1 kg block of Amedei’s Toscano 70% is mine tomorrow!
