Hello Everyone,
I just tried the Chuao 2002 by Valrhona…I am trying to pinpoint the flavors…I know the flavor I am tasting like the back of my hand but I can’t pinpoint it in words….anyone tried this bar and have a review of it?
The most I can put in words is:
mild bitter spice
cloves
egg yolk
I like the bar but can’t put it into words…your help would be appreciated…

Here are my tasting notes (keep in mind that my palate still needs a lot of educating and I have a hard time getting beyond the basic flavors): “Fruity and floral immediately; tropical; no bitterness; dried cherry and chocolate finish.” I really think this is one of the best bars I’ve tried. Yesterday, a friend tasted it and thought it was too fruity. Thought it was like eating one of those chocolate oranges. I can see that. It has a jamminess to it, but I think it still has an assertive chocolate flavor and a lot of complexity. I hate bitterness, too, so….
I’m so glad to have local sources for this. I’ve decided to go stock up on half a dozen bars or more. I prefer Domori’s Porcelana, but at $7 for a 75g bar, these are a bit cheaper. (The Porcelana goes for $4.50 for 25g here.) A bit off topic, but Domori’s oversized boxes really annoy me.

I just took a taste. I can see cloves. It does have a richness that makes sense for egg yolks. I don’t see “bitter spice” at all though. This is one of the least bitter bars I’ve had.

Bitter spice might have been a bad choice a words…I didn’t think there was a lot of bitterness at all…just trying to put the “Flavor” into words…Are you shopping at Cacao in portland?

I was in at Chocosphere the other day picking up an order. Got a tour and saw their massive stockpile of these. Apparently, they bought ALL of Valrhona’s discovered stock. So allegedly no one else in the world has them except those Chocosphere sells them to. Personally, I think they’re selling them too cheap and I told them so. (Don’t hate me.)
I went through a bit of a bar the other night and was tasting/smelling orange blossom, maybe. There’s definitely a strong floral aspect. I’m not sure how consistent they are from bar to bar. It may have just been that it was late at night, but I didn’t find that bar as complex as the bar I had at home. I should have kept some so I could have done a head to head tasting. I still prefer this to Amedei’s.
