I have now tried all of Guittard's, Michel Cluizel's and Valhrona's origin bars, and quite a few bars from Domori, Pralus, and Bonnat, so I finally feel educated enough to post a list of favorites.

My top five in order:

1: Valrhona Guanaja, Amedei Chauo, Guittard Chucuri
4: Valrhona Caraibe
5: Valrhona Gran Couva.

How would you describe the Guanaja...I actually have a piece of it in my mouth at the moment and was wondering your thoughts...

It has the deeper notes that I taste first off...not a light light bar but not dark either. I have only had a half of one piece now but the only way I can describe the flavor is a little grassy and woody with hints of fruit as I go along...

I mainly remember fruity flavors and the strong influence of vanilla, which produces an experience which reminds me of chocolate chip cookie dough.

Wow! This discussion has been going on for a long time! I'm finding my way in the world of premium chocolate, so I'd like to mention my top 5.

1. Domori Carenero Superior
2. Cluizel Los Ancones (was my #1 for a few months)
3. Bonnat 75% Chuao
4. Cluizel Maralumi
5. Marquise de Sevigne 70%
6. Amedei Cioccolato Fondente Extra 66%

I still have so many to taste, though! Suggestions?

This is pretty indicative. You like strong, spicy flavours most of all - cinnamon tones in particular - and also dark, deep fruits like blueberry and prune. Nice balance, btw: these are complementary flavour components. Anyway, one you therefore must not miss is Malagasy Mora Mora 2006. It's almost exactly the flavour profile that these bars suggest. It goes virtually without saying that you must try the Amedei Chuao given that the Bonnat ranks so well. The flavour profile overall that your preferences imply is characteristic of Madagascar, so in addition to the Malagasy it'll be worth trying all the principal Madagascars : (Cluizel)Mangaro, (Valrhona)Ampamakia, (Domori)Sambirano, Amedei Madagascar, Pralus Madagascar, Lindt Madagascar, Guittard Madagascar.

Since you liked Los Ancones (and really, who doesn't?) also try Domori Chacao Absolute. It's another Dominican Republic of similar profile overall.

Once you get through those, plenty more to try. It depends, though, on whether you are more interested in experimenting with radically different profiles or homing in on your favourites.

I rarely buy the Amedei because of the relative price. I don't enjoy it that much more than others yet it's at least twice as expensive.
