Hi, I’m new to 70% and to the world of being serious about chocolate. I’m impressed by the knowledge I see in all of you as I read some discussions in this forum.
I hope this is not a naughty word to say to all of you, but I’m wondering what your opinion is of the Austrian company Zotter. I live in Austria and have recently discovered the brand. They make over 50 different varieties, only some of which interest me. I’ve tried a few and they are tasty – I think all of them have a truffle like center.
I’ve always considered myself a chocolate “purist” – without added flavors or textures, but this company makes some very interesting things. What are your thoughts/experiences with Zotter?

In Hungary they are popular among gourmets. The wild hog bacon-plum marmalade-café combination is one of the most sold. I myself prefer untouched chocolate, and some of the Zotter combinations are quite odd to me. It’s true they only use real ingredients and great craftmanship. So if anything is worth at least one try, they are definitely there.

hmm, i myself am a purist as well, but every now and then i’ll go for some zotter or coppeneur or whatever.
many zotter bars are delicious. i prefer the really exotic ones, such as the one domenico mentioned. i also like the one with mustard. very yummy. imo a few of the bars are just exotic for the sake of it though.

I too really like Zotter for the exotic varieties e.g. coffee-mustard, bread-sunflower seeds, cranberry-thyme. These niche products don’t make much money but he (Josef Zotter) makes them for the fun of it and I appreciate independent producers. The “Simply Cocoa” is the nearest you will get to pure chocolate, it’s cacao nibs in dark nougat, coated with dark chocolate. I think quality-wise Zotter chocolate is remarkable. Josef himself chooses his ingredients very deliberatley. His cacao is fair traded and the fillings are made from local fruits and spices if possible. From what I’ve heard he also has plans to buy his own little plantation.
I mean he has that thing about alcohol in the chocolate but if I have a longing for filled chocolate Zotter is my no.1 choice.
