Just tried Valrhona Palmira 2004 for the first time. My overall impression is that it good, but not excellent. It kind of lacks characteristics. Ampamakia is very fruity, Chuao spicy, Gran Cuova slightly dark and very "chocy". Palmira has a hint of nuts and honey, just as the label says, and it off course has the characteristic acidic-red fruits Valrhona taste. But it falls between its siblings tastewise, and is IMHO too sweet. It would probably better if it was 70%, not 64%.

Try again Valrhona, you know better!
