Hi All – New to the forum – I hope you all may try this California producer’s bars in the UK! At first earthy (no off taste though) then opens nicely into cherry and bitter almond; trace acidity is balanced by spicy caramel. Smooth without being waxy, this producer has the right % of cocoa butter; decidedly less waxy than the Cluizel 1er Cru bars. Stays pleasingly on the palate for minutes on end – no bitterness, rather red-fruit, marzipan (some say anise) with soy (umami), smoke and criollo perfume that demands another morsel. Cheers.

Yes, this is a really good 80% class chocolate, imo, with heavy flavors of bitter almond and cherries, but I also detected tangerine and rum raisin. I will have to acquire another bar to re-confirm my previous tastings, though. Besides, it’s been a while since I’ve had some Scharffen Berger. If you get around to it, try the 41% milk.
