I just finished my bar of Scharffen Berger 82%, and it is now probably one of my favorite 80% bars. After trying numerous 80%-range bars, I found that the balance of flavors in this one to be almost perfect. The flavors don’t fight with each other or distract me one bit. Flavors of cherries, marzipan, slight tobacco, and nutmeg were always noticeable, and bananas were even detected in the finish. Neither flat nor dry, bitter nor astrigent; the bar was all around chocolaty even with the barage of flavors presented to me (not distracting or detracting).

Have you tried Pierre Marcolinis Fleur De Cacao (85%)?
It is my favourite but I have not tried Scharffen Berger 82% bar.

Fleur de Cacao is one of the best around – it isn’t very complex, but the taste is so extremely rich cacao that it beats most other bars.

Fleur de Cacao has become one of my favorites. Too bad I only bought one bar when I was i Antwerp. Not at all bitter, even if it is a 85% bar.

Yeah, I heard similar things about Fleur de Cacao; I really want to try it, but it’s practically impossible to get over here. As I’ve said before, Castelain’s 85% is extremely good too. It’s not complex either; the chocolate flavor is extremely rich and powerful, without other flavors or nuances detracting from the overall chocolatiness. It’s really worth checking out.

Domori’s Break is really good too. Although it’s simply Blend No. 1 with cocao nibs, the cocoa content is 80%. It has quite an assertive banana flavor with hints of coconut and hazelnuts. Strong chocolate flavor too with the interesting texture that we’ve all recognized among Domori’s bars.

I just finished my last bar of Break yesterday (it was gone very quickly), so all I have left are Gem and Puro. Its fruitiness, mild and refreshing, is very subtle and thus not overpowering. Now, call me biased, but bananas are my favorites fruit, so perhaps that’s why I enjoyed this bar so much. Puro has a milder banana flavor, but mangos manage to jump in there too.
