Alex, I just assumed that Milka was sort of American/Britian. You could have mentioned any Norwegian bar and I would have said the same - I mean, I would have said something about stinky vikings. Btw, you're listed as from Germany - can't see you've got any reason to worry except on behalf of your fellows.

Did anyone, by chance, taste a sourness reminiscent to yogurt in Puertomar? To me, it had a very distinct banana-mango yogurt flavor with notes of strawberries and cherries and a fairly strong cream tone. The sourness could also be regarded as the unusual sweetness, as well, so it depends on how you look at it. It wasn't a jarring or offending sourness, but a pleasant one that accentuated the overall fruity tone.

Oh, btw, I know Domori claims not to add extra cocoa butter, but I found a discrepency on their boxes. On the Chateau line, the ingredients simply state cocoa mass and sugar, whereas on the 75g boxes, an additional ingredient, cocoa butter, is mentioned. Maybe extra was added to these, or maybe it was merely a typo?

I'll forgive you this time [;)] I'm glad Domori doesn't add extra cocoa butter to the Chateau line because the bars are already delicate enough in flavor, the addition of cocoa butter would probably mute them too much. The 75g line is much more potent in flavor, imo. I'm happy with either line, though; Domori is just astounding.

I could find a better thread and since it seems there is some talk of cocoa butter content i thought i could ask here.
I wonder if anyone might be able to hazard a guess on the cocoa butter content of the 75% Pralus Couverture. Wanted to make some ganaches this weekend but can't call them as it's saturday and need to know how much cream i'll need. I could prob guess but it's helpful to know. Also the fat content of the 45% Melissa milk?
