We will shortly start to produce our chocolate from liquor rather than buying couverture, at least for some of our chocolate. This will require a lot of trial and error on adjusting the parameters for conching and refining. Therefore we are looking for a few people to help us taste the results-ideally not located 1000s of miles away, not direct competitors and able to describe what they are tasting.
