I am going to be making a variety of truffles to give as my wedding favors. While I enjoy working with chocolate, I am not that terribly experienced with each brand. I will be using mostly something around 70%. Which brand will give me the best bang for the buck? Also, any suggestion on retailers that can supply fairly small bulk quantities?

I made truffles for wedding favors for a friend’s wedding and I used Callebaut. The 5KG block is very cost effective (you can get one for about $60 on chocolatesource.com) and comes in several different strengths. I actually bought a couple of bars of more expensive chocolates to mix with the Callebaut for extra flavor and rolled the finished product in high-quality (Valrhona) cocoa – I found that this worked very well.
