it’s very low – i forget the actual numbers, but have them at home if you really need them. almost nothing. caffiene’s kissing cousin – theobromie – however, averages around 12,800 ppm in liquors – of course that will vary by liquor and seasonality. theobromine is also a stimulant, and is the reason why you shouldn’t feed your goodies to horses or dogs as they respond to it muchmore than we do, and can send them into cardiac arrest…

The data I’ve seen averages about 200mg of caffeine per kilo of cocoa mass. That would be 20mg/100g, or about 15mg in 100g of 70% chocolate (assuming no added cocoa butter…)

By way of comparison, that’s about the same as 1.5 oz. of decaf espresso.

The numbers seems to vary hugely – Sebastian quotes 200 mg per kilo, but Amano’s calculations start with about 200 mg per 100 g of cocoa mass! Which also makes chocolate much stronger then any other stimulants, like coffee or tea, per 100 g (apart from espresso)?

Art’s piece averages it at 0.2% (two tenths of a percent) by mass. That’s the same as the 200mg/kg figure. It all looks like the same baseline to me…

For what it’s worth, the table on Pg.22 of Minifie lists these values:

Average 22 samples:
Percentage Theobromine: 1.22
Percentage Caffeine: 0.214

Maximum:
Percentage Theobromine: 1.73
Percentage Caffeine: 0.416

Minimum:
Percentage Theobromine: 0.82
Percentage Caffeine: 0.062

Yes, but I was referring to numbers in the table, where 100% chocolate has 198mg caffeine per 100 g, and all the rest of the table accordingly..

remember that content of liquor is different than the content of chocolate. chocolate only is part liquor. levels can very widely based on origin and processing.
