Cocoa Mass just means the gritty solids that are produced after roasted cocoa beans are ground up. It’s a UK and I guess Australian term that means the same as Cocoa Solids, or in the US it would be called Chocolate Liquor. It’s either used directly to make chocolate, or it is squeezed to remove cocoa butter and leave solids that are turned into cocoa powder.
