The BBC programme ‘Countryfile’ did a report about six months ago on a chocolate maker that made chocolate from pure cocoa beans. Does anybody know who this was and where I would be able to buy some?

Many producers create fine chocolate and it always comes from cocoa beans. Here is a list of some of the best for you…
Amedei
Domori
chocovic
guittard
scharffenberger
dagoba
valrhona
callebaut
micheal Cluizel
Those are just a few but it can get you started if you want to find fine chocolate. If you want to buy some and you are in the USA you can use Chocosphere.com if you are anywhere near Europe you can use this site to order…hope this helps

Patrickli is there a way to view your site in english? I just checked it out and some of your stuff looks great but I can’t understand anything!! lol By the way, what is your book about? I’ve always had an idea for a chocolate show but no one to pitch it to.
Keep it Sweet!

Thanks guys. Sorry I think I mean it was 100% cocoa chocolate. Is this possible and is it any good? The maker also hand picked his own beans.. I’ll let you know who it was if I find out..

A few chocolate makers make a 100% chocolate or called “unsweetened chocolate” or “chocolate liquor” It is going to be very bitter for the most part though. You almost have to work up to it. If you can find a bar that is a sinlge origin 100% made from criollo or trinitario it might have a chance for tasting somewhat ok…but most companies make a blend of flavorfull beans and “filler” beans to bring price down. I know that Guittard, Michel Cluizel, Callebaut, Domori, Bonnat, valrhona and probably a few more make 100% chocolate(unsweetened chocolate). Check them out…I suggest Domori. They have some good 100%’s that are made from better beans…

Hey Andypeeps,
It was brought to my attention that I mentioned “filler” beans that companies use to bring down the cost of chocolate. That is not the only reason they use “filler” beans, which are usually called “forastero” beans(filler just being the adjective). They use forasteros as base flavors of chocolate. They have a strong chocolate taste but many times lack the subtle flavors that many of use enjoy in the criollo and trinitaro.
Just thought I would clear that up for you so it was more understandable.
Hope your search is going well…

hey guys. just to let you know that i didn’t find out who the maker was in the end so sorry for the heated discussion! However I managed to buy something similar. It’s ‘El Tesoro’ 100%. I’m learning extremely fast about the ‘filler’ beans so does anyone know what bean this is made from? I’ve just tried some and i’m suprised that although bitter it wasn’t as bitter as i thought it would be. it also tastes pretty good with wine! is this common??
