I recently dined at an upmarket restaurant in New Zealand. I am a dessert eater (always) and after the meal I requested the menu, wow! Valrhona fondue. Being a bit of a chocolate snob I asked what type of Valrhona was used, the waitress asked kitchen and came back with the answer, Manjari. Served with fruit, biscuits and marshmallow yummy. Lovely presentation lots of dipping stuff and a candle underneath. I tasted the chocolate, not Valrhona! Perhaps a bit mixed in with some other chocolate but definitely not pure Valrhona. What I should have done is demand to taste some of the chocolate before getting the dessert and also to see the label. So here is my suggestion, from now on we demand the same respect for the chocolate as is given to wine. See the label taste a bit and then decide whether or not to order the dessert. This has been ignored for far too long in the restaurant industry and I for one am getting tired of the dessert not being thought of as an important part of a meal.
