What is a good way to store chocolate, in an area that is hot during the summer? I have read "chocolate is best stored tightly wrapped in a dry place with a cool temperature of 15 to 21 degrees C (60 to 70 degrees F". Is a dedicated refrigerator (set to those temperatures) the right solution?

I know someone who created a "cool closet" to store chocolate for her shop. It is just a area that is covered with a thick poly sheet to whold the air in and has a small window AC unit that blows cool air in.

The Chef;
How big was the walk-in and how big was the dehumidifier?? I'm trying to figure out how to utilize sadly an unused freezer and if I can get the temp warm enough and maybe install a de-humidifier it might be a great place for finished choc.! Thanks.

A wine cooler! That is a great idea...because those already can be set to "warmer" cool conditions right Montegrano?

Pat, yup! And some of the more expensive models have digital temperature control that maintain humidty levels as well. There's a thread somewhere around here about this topic too.
