How do you store chocolate in a warm environment?

What is a good way to store chocolate, in an area that is hot during the summer? I have read “chocolate is best stored tightly wrapped in a dry place with a cool temperature of 15 to 21 degrees C (60 to 70 degrees F”. Is a dedicated refrigerator (set to those temperatures) the right solution?

Wrap it in foil, zip it up in a ziplog bag tightly. freeze it.

I know someone who created a “cool closet” to store chocolate for her shop. It is just a area that is covered with a thick poly sheet to whold the air in and has a small window AC unit that blows cool air in.

How big was the walk-in and how big was the dehumidifier?? I’m trying to figure out how to utilize sadly an unused freezer and if I can get the temp warm enough and maybe install a de-humidifier it might be a great place for finished choc.! Thanks.

Pat, yup! And some of the more expensive models have digital temperature control that maintain humidty levels as well. There’s a thread somewhere around here about this topic too.
