Perhaps it has already been asked, but I was wondering whether Dolfin dutched their chocolate. I could not find the answer on forum, so I decided to ask…
Secondly, if they do dutch, would that illegitamize the bars from that company being included in the reviews?

Why do you suspect Dutching? Is it the pitch black color of the bar? I have not tasted their bars for a very long time, so I cannot make any statements regarding that. I need to acquire some more for a formal tasting and subsequent review.
Dutching does not disqualify a bar from review here. Several Dutched chocolates have been reviewed, such as Venchi and Blanxart.

I had a bar of their standard 70% It was the bar in the “Gentleman’s tobacco pouch.” For a 70%, it seems very mild. Now, I have had plenty of mild chocolates in the 70 range, but the mildness I encountered in the Dolfin seemed very suspicious. The taste in the chocolate was also very foreign to me… I cannot quite put my finger on it. As for the colour, it was quite dark–though not pitch black.
I was just curious, that was all.

Mild? I remember trying it about two years ago and thinking it was particularly strong for its class, but then again, that was two years ago. And again, the bar was almost pitch black too, so maybe it’s changed. Who knows.
Now, if you want to talk about mildness, try the 88%. That was rather mild and tasted almost sweet with lovely nutmeg notes.
