Was reading about artificial flavourings recently and came across a very good reason (as if you needed one) not to buy chocolate made with vanillin. can you believe the stuff is sythesised from the waste products of the paper manaufacturing industry!

I can believe it. It’s cheaper than real vanilla, and if a manufacturer cuts corners here, then the rest of his practices certainly become subject to questioning.

Very good point, Monte. Vanillin, in moderate amounts, will IMHO in itself not necessarily make the choc bad, but it indicates that the rest of the choc is cheap stuff as well. An that matters!

Also, it implies that the majority of the bar’s beans are bulk, and quite frequently the cacao’s inherent vanilla flavors already dominate. So compound that with fake vanilla, and the overall “fakeness” of vanillin becomes much more obvious. Or at least to my taste buds.
